Nilagang Baboy (Pork Ribs Nilaga)

Here's a Filipino dish perfect for the rainy season and cool weather, Nilagang baboy.

Nilagang Baboy

Cooking Time: about 1 hour | Serves: 4-6

Ingredients:

1 kilo pork ribs

180g cabbage (leaves separated)

1 large white onion (diced)

6 cloves garlic (minced)

4 pcs. potatoes (cut into 4)

10g ginger (cut into strips)

2 tbsp. fish sauce (patis)

3 pcs. green chili (siling pansigang)

1 L pork broth (water + pork broth cube)

whole pepper corn

salt to taste

Procedure:

  1. On a large pot, fry potatoes until slightly golden brown. Set aside.

  2. On the same pot, saute ginger, onion, and garlic until aromatic.

  3. Add pork ribs. After about 10 minutes, add the broth. Allow to boil until meat is tender.

  4. Add potatoes and simmer for 10 minutes. Add cabbage, green chili, and whole pepper corn.

  5. Season with fish sauce and salt to taste.

Tips:

  1. You can use pressure cooker to cook the meat to cut cooking time.

  2. Serve with plain rice and fish sauce with red chili.

  3. Serve hot.
